Depending on his inspiration and the market, Frederick will concoct traditional dishes with a twist. Examples? Daube Lorraine with plums, duck dauphinois with gingerbread, monkfish with bacon, lentil salad with smoked carp, authentic quiche Lorraine, spice-infused crème caramel, Nancy cake.
