While the Lorraine decor of the guesthouse ‘Les 3 officiers’ plays with the codes of good taste and confirms the peaceful nonconformity of the place, as well as its openness to other cultures, the guest table also follows this philosophy.
Born in Lorraine, and in Metz more specifically, Frederick has a passion for taste, healthy things, and renewed, airy tradition, and his cuisine reflects this mindset. Depending on his inspiration and the market, Frederick will concoct traditional dishes with a twist. Examples? Daube Lorraine with plums, duck dauphinois with gingerbread, monkfish with bacon, lentil salad with smoked carp, authentic quiche Lorraine, spice-infused crème caramel, Nancy cake.
